Established the cause-and-effect basis for the authorized EU claim: olive oil polyphenols (≥5 mg hydroxytyrosol and derivatives per 20 g daily) contribute to the protection of blood lipids from oxidative stress.

A Mediterranean diet supplemented with extra-virgin olive oil was associated with a lower rate of major cardiovascular events than a reduced-fat control diet. An association in a dietary-pattern trial — not an authorized claim for any single product.

The Effect of Polyphenols in Olive Oil on Heart Disease Risk Factors

Higher-polyphenol olive oils produced dose-dependent improvements in HDL cholesterol and markers of oxidative damage compared with low-polyphenol olive oil. Note: EFSA has not authorized an HDL claim for olive oil polyphenols.

Ibuprofen-like activity in extra-virgin olive oil

Identified oleocanthal as the compound behind fresh olive oil's throat sting and showed it inhibits COX enzymes in vitro, similar in mechanism to ibuprofen. A mechanistic finding, not a clinical outcome.
